Place ¼ cup warm water in a small bowl, add the yeast and stir. Allow to sit for a few minutes to get foamy.
In a mixing bowl, add sugar, butter, salt, 4 cups of flour. the remaining water and the yeast mixture.
Mix until a sticky dough forms. Add some additional flour (about ¼ cup) and mix until a smooth dough forms.
Place on floured surface and divide dough in half. Form 2 foot long sections of dough.
Cut each log of dough into 6 pieces. Roll each piece into about a 7 inch breadstick. You will have 12 breadsticks.
Place breadsticks onto a parchment lined baking sheet, 1-1 ½ inches apart, cover with a cloth or plastic wrap and allow to rise for 45 minutes.
Preheat oven to 400°
Make the topping and brush the breadsticks with half the mixture.
Bake until golden brown, about 12-15 minutes or so.
Remove from the oven and brush with remaining topping.
