Your harvest was bountiful, an array of peppers is overflowing your countertops… Now what? One of the easiest ways to preserve them is to dehydrate. I love taking all these extra peppers and turning them into a row of little jars full of seasonings I will use all year long! Let me tell you how I do it.

Prepare Your Peppers
Choose fresh, crisp peppers. You can do a mixture, or prepare one variety at a time.
Rinse well, and remove stems, seeds and cores.
Cut into thin slices. You could also chop them, but then you’ll need to make sure you lay down parchment paper on the trays so the pieces don’t fall through.
Dehydrate Peppers
Line the trays of your dehydrator with your pepper slices.
Dry at 125 for 8-12 hours.
You want the peppers to be completely dry and brittle to the touch.
Sometimes, if it’s a dense pepper (like a wax pepper variety), you may need to dry it a little longer.
Grind Peppers
The next step is to grind your peppers. You can use a regular food processor, or a spice grinder.
Personally, I prefer the spice grinder. It chops finer and more evenly.
Store Peppers
You can store your ground peppers in airtight containers. I like to put mine in cute little mason jars or spice jars.
They will last up to 2 years.
Notes
Mix it up! Try different pepper combinations.
Add in other flavors. Dehydrate onions and garlic, and create your own seasoning blend. Or, just throw in some store bought onion powder and garlic powder to your ground peppers for an easy blend.
