Sourdough Crackers
I try to keep my sourdough process as simple as possible. To be honest, I don’t even use a scale… Yeah, it’s true. In the morning, I simply keep a half cup of starter, and feed it a half cup of warm water and ¾ cup all-purpose flour.
This usually leaves me with ¾ to 1 cup of discard.
(I should note here, that I feed my starter once a day on non-baking days, and twice on the days I bake bread.)
I add the discard to a mixing bowl. Like I said, there should be about a cup of it or so, since I’ve been feeding it at the ratio above. I don’t worry about exact measurements when it comes to this recipe. So if you’ve got a little more or less, no worries.
Next, I melt 2 tablespoons of butter in a small bowl, then add that to my discard in the mixing bowl. Then I throw in about ¼ teaspoon of salt.
The next step is to choose your dried herbs and seasonings. My favorite combination is a teaspoon of dried garlic chives and a teaspoon of dried rosemary. But it can honestly be anything you want. Experiment with it! I’ve made spicy ones, by adding red pepper flakes. And I’ve used Italian seasonings, garlic powder and parmesan cheese, or even just salt and black pepper. The stronger the flavor choice, the less you’ll need in the recipe. The milder the flavor, the more of that seasoning you’ll want to add.
After you’ve combined those few ingredients, simply spread it thinly on a parchment paper lined baking sheet. This is actually the hardest part…
You’ll bake in a preheated oven at 325 degrees Fahrenheit for 20-30 minutes. Until it starts to turn golden brown.
Allow to cool and then break into beautiful, rustic pieces of yumminess.
I personally like to top them with a thin layer of cream cheese. But my husband and kids prefer them plain. They would also be great for dipping.
These crackers never last more than a few hours in my house. Which is fine, because I can just whip up another batch the following day!
Sourdough Discard Crackers
Ingredients
- 1 cup Sourdough starter discard
- 2 tbsp Butter Melted
- 1/4 tsp salt
- 2 tsp Dried herbs
Instructions
- Preheat oven to 325°F
- Line a baking sheet with parchment paper.
- Combine discard, melted (and slightly cooled) butter, salt and choice of seasonings in a mixing bowl. Stir well.
- Spread mixture in a thin, even layer on the parchment paper. Sprinkle with a little more salt.
- Bake for 20-30 minutes, until golden in color. Let cool completely before breaking into pieces.
